Beer Bread 3 cups self rising flour 3 tablespoons of sugar 1 12oz. can or bottle of beer Mix all ingredients and place in greased loaf pan. It will be very sticky. Flour your hands before putting it in the loaf plan for easier handling. Bake at 350 degrees for an hour. I had to publish this recipe after going to a "cooking" party that sold pre-mixed Beer Bread for $4.99 a bag. Considering it's nothing but flour, sugar, and beer, I thought that was a bit expensive. Now you know how to make your own!

Zucchini Nut Bread
2 cups grated zucchini
4 large eggs
2 cups sugar
1 cup oil
3 1/2 cups flour
4 teaspoons baking powder
1/2 teaspoon salt
2 teaspoon cinnamon
1 cup pecans
1/2 teaspoon vanilla
Mix all ingredients well. Bake at 350 degrees for 55-60 minutes in 2
well greased 9 x 5 loaf pans. A great way to use all the zucchini in
your garden! It also freezes well if double wrapped in plastic and
aluminum foil.
Broccoli Salad
Broccoli: large head or 4 stalks
1/2 cup sunflower seeds
1 cup raisins
small red onion
12 oz. cooked bacon
Dressing:
1 cup Miracle Whip
1/2 cup sugar
1 tablespoon vinegar
Mix dressing in bowl first, then add salad ingredients and mix well.
Tastes best if made 1 day before serving. To make it faster, substitute
pre-cooked bacon bits instead of cooking bacon.
Raisin Oatmeal cookies
3/4 cup butter
1 cup firmly packed brown sugar
1/2 cup sugar
1 egg
1 teaspoon vanilla
1 cup flour
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
3 cups old fashioned oatmeal
1 cup raisins
Mix all ingredients well and bake at 350 degrees for 12-15 minutes. As
a moistening idea for raisins that are dry, soak them in bourbon for 30
minutes while preparing your other ingredients. Drain them well before
including in recipe. It helps keep the cookies moist! Most of the
bourbon will evaporate while baking…but will leave an aroma!!
Caramel Squares
1 stick of butter
1 box (16oz) of brown sugar
2 eggs
2 cups self rising flour
1 teaspoon vanilla
1 cup of nuts
1 can of coconut.
Mix well and bake in a greased 7 x 11 pan at 350 degrees for 30 minutes.
Absolutely decadent!
